The Pillivuyt Medium 6.75 - 5 cup - Sancerre Soufflé Dish - is a key addition to any kitchen. The walls of these dishes, as in all Pillivuyt items, are created with a perfectly uniform thickness for exceptionally even and efficient heat conduction especially valued in the preparation of a soufflé. Soufflé dishes are simple and classic in design ¿ round with straight sides to facilitate the soufflés rising. Pillivuyt's Sancerre Soufflé Dish comes in two additional sizes Large - 8.5 and Extra Large - 9.5. A soufflé may be savory or sweet, hot or cold. Traditionally a soufflé is a dessert made from a thick egg yolk-based sauce or puree that is lightened by stiffly beaten egg whites and then baked. Baked soufflés are much more fragile than those that are chilled or frozen because the hot air trapped in the soufflé begins to escape (causing the mixture to deflate) as soon as the dish is removed from the oven. Savory soufflés are almost always hot and can be made with a variety of ingredients including cheese, meat, fish or vegetables. Dessert soufflés may be baked, chilled or frozen and are often flavored with fruit purees, chocolate, lemon or liqueurs. Foil or parchment "collars" are sometimes wrapped around the outside of a soufflé dish so that the sides of the frozen or molded mixture are supported until they set. Once the collar is removed, the soufflé stands tall and appears to "rise" out of the dish. Someone reviewed this stating it was a set. It is not, the price is for a single dish. I was disappointed to pay so much for one dish, and it is pretty fragile. I broke it soon after it arrived. Pretty dish for making single serve baked eggs, but too expensive and fragile to me.

I borrowed 2 11" dishes from a friend for a family reunion dinner. I made one scalloped potato with three cheeses in my regular glass baking dish and one in the Pillivuyt baking dish. I had never used procelain baking dishes before. The two items were cooked separately. The glass dish had some not quite cooked spots and some were almost over cooked spots. The Pillivuyt dish cooked the same throughout. I immedately purchased this 9" dish and began to look for the larger size that my friend had loaned to me. Unfortunately, the 11" had not been imported to the U.S. for a couple of years. And the 13" several years before that. I did find one 11" on the internet in New York and it was their last one. I plan to buy more Pillivuyt, I guess from a company in UK.

I've been dying to get a set of dishes like this so I could make individual oven pancakes for my family. Imagine my surprise and confusion when I received one from my wish list (as a gift) and it's actually a set of 6! I haven't yet found in the description where it says it's a set, but I thought I could let people know. Otherwise, nice looking and sturdy, can't wait to try them out.

I was looking for something that I could take my lunch to work so that I wouldn't have to carry so many containers, and this is the perfect size. It holds just the right amount for me, although I wouldn't use it for salads because as much as I love salad, this container wouldn't be big enough. I also wouldn't recommend putting liquids in it, unless you're sure that you can keep the container upright; otherwise, the liquid will leak out.



I, also, am trying to get away from using plastic containers in the microwave, and Pyrex (without the lids) are fantastic; they are easy to clean, don't hold odors, and I have no problems with the lid(s) not fitting. Pyrex gets a "thumbs-up" from me.

I'm trying to exchange all my plastic food storage to glass. I don't microwave in plastic, and you can't put plastic in the oven, so it just makes sense to me to store food in the same container you heat it in. I bought several shapes and sizes of these and I'm happy with them all. They go straight from freezer to refer or cold oven. Have not checked for leakage - just makes sense to keep them upright to me as I don't believe they are designed to be leakproof like Tupperware.

Dish is great but description is all wrong. Based on the dimensions, this would be 39 cups not 3. It's a 3 quart dish and the dimensions are the shipping box. It's much smaller

These are great for packing lunches. When putting away the leftovers from dinner I use these for the purfect portion for the next days lunch. They are also good to freeze future lunches that can be used as needed. Sure saves money not going out to lunch daily & much healthier. I own a dozen of these babies. Dishwaser safe & a lot better than plastic containers. Only the lid is plastic & can be taken off before microwaving. Glass is the way to go.
